Sarah Di Lorenzo shares hearty and healthy soup recipe to warm up winter nights


With Chilly winter weather now solidly settled in, clinical nutritionist Sarah Di Lorenzo joined The Morning Show to share the hearty and healthy recipe to help warm up those cold nights.

Di Lorenzo is the author of the best-selling The 10:10 Diet Recipe Book. She showed Larry Emdur and guest host, Natarsha Belling, how to make a Delicious spicy pumpkin soup.

Spicy Pumpkin Soup

SERVES 4

Ingredients

1 red onion, sliced

3 cloves garlic, crushed

1 tablespoon olive oil

2 carrots, chopped

1kg pumpkin, chopped

1 teaspoon chilli flakes

2 teaspoons ground coriander

1 liter chicken stock

2 cups milk

salt and pepper, to taste

Greek yogurt, to serve

chopped fresh chilli (de-Seeded) and chopped fresh coriander, to garnish

You’ll only need a few healthy ingredients to make this delicious and spicy soup treat. Credit: The Morning Show

Method

  1. Add the onion and garlic to a saucepan with olive oil. Cook until translucent.
  2. Add the carrot and pumpkin with chilli flakes and ground coriander. Cook until the pumpkin and carrot are slightly caramelized.
  3. Add stock and bring to the boil, reduce heat and simmer until the carrots are cooked through. Add the milk, salt and pepper and Blend in the pot using a handheld Blender, or transfer to a Blender.
  4. To serve, add a dollop of Greek yogurt and garnish with fresh chilli and coriander.
