Spicy Pumpkin Soup
1 red onion, sliced
3 cloves garlic, crushed
1 tablespoon olive oil
2 carrots, chopped
1kg pumpkin, chopped
1 teaspoon chilli flakes
2 teaspoons ground coriander
1 liter chicken stock
2 cups milk
salt and pepper, to taste
Greek yogurt, to serve
chopped fresh chilli (de-Seeded) and chopped fresh coriander, to garnish
- Add the onion and garlic to a saucepan with olive oil. Cook until translucent.
- Add the carrot and pumpkin with chilli flakes and ground coriander. Cook until the pumpkin and carrot are slightly caramelized.
- Add stock and bring to the boil, reduce heat and simmer until the carrots are cooked through. Add the milk, salt and pepper and Blend in the pot using a handheld Blender, or transfer to a Blender.
- To serve, add a dollop of Greek yogurt and garnish with fresh chilli and coriander.
